- Fresh eggs are products which are sometimes naturally contaminated with salmonella at a dose which is not hazardous to health, but when can become so in very little time.Bacterial growth can increase from 5 to 100 billion in a single night of storage at more than 20°C. Take precautions every time you use them in the kitchen. Researchers have beaten eggs contaminated by salmonella with milk and flour to make fritter batter. They then observed objects set around them, which had been previously sterilised. After beating with a fork, the salmonellae spread everywhere up to a metre around the bowl (door handles and knobs, walls, taps, working surface, floor). After beating with an electric mixer in an open bow, salmonellae were found three or four metres from the bowl. Conclusion: prefer a closed mixer which you disinfect carefully after use.
